Dairy Queen in Idaho Falls off of 17th St. has been a partner with Fry Right for a few years now.

One of the awesome aspects of this job is getting to work with new people at this Dairy Queen location. One of the most beneficial aspects of The Fry Right System is keeping new crews trained on the proper protocols and tools used to keep fryers looking gorgeous and producing safe golden fried food all cycle long.

The 2 vats to the left are the results of the Vat Cleaning protocol.  This is a protocol that replaces the Boil-Out method.  As you can see clearly, the oil is so clear you can see down into the vat.  The baskets look brand new even though they are a few years old, and the vats are beautiful stainless steal shiny.  It is how every fryer should look at the beginning of a quality oil cycle.

This difference in fryer cleaning results can be what keeps you from achieving a solid quality oil cycle without losing any presentation or taste quality by the end of the cycle.  It does not look like much, but on the chemistry scale, it is monumental. The size of carbon is so small that just the light brown dingy look is probably millions if not billions of carbon particles built up on top of each other.
